About the job
Based at the Mandarin Oriental Downtown, Dubai within the Culinary department, the Junior Sous Chef is responsible to assist the Sous Chef and Head Chef in delivering exceptional Greek cuisine while ensuring smooth operations of the kitchen and outstanding dining service for our guests.The Junior Sous Chef reports to the Sous Chef.
As a Junior Sous Chef, you will be responsible for the following duties:
- Support the Sous and Head Chef in all kitchen dutiesu2014from prepping and cooking to platingu2014while upholding top-tier quality, hygiene, and safety standards.
- Help train, motivate, and supervise kitchen staff to ensure faithful execution of recipes and consistent, authentic presentation of Greek cuisine.
- Oversee service periods to maintain smooth operations and timely delivery of dishes that reflect genuine Greek flavors.
- Manage inventory and ordering to keep key ingredients in stock, optimize costs, and protect profitability without sacrificing quality.
- Uphold stringent cleanliness and food safety protocols in line with hotel policies and local regulations.
- Lead by exampleu2014mentoring the culinary team, collaborating with service staff to boost revenue and guest satisfaction, and injecting fresh, trend-inspired ideas into the menu.
- Experience in a similar role within a five-star luxury hotel or fine dining setting, with pre-opening or Michelin-star background preferred.
- Familiarity with inventory and procurement processes to enhance efficiency and profitability.
- Deep understanding and passion for Greek cuisine, combining tradition with creativity and innovation.
- Strong leadership and team management skills, capable of motivating a multicultural culinary team.
- Effective communicator in English; Greek language skills are a strong asset.
- Highly organized, detail-oriented, and able to multitask under pressure in a dynamic environment.
