Job Summary

As a Commis, you will play a pivotal role in ensuring seamless operations within the Food & Beverage Department, directly influencing guest experience through meticulous food preparation and adherence to high culinary standards. Reporting to a Senior Chef, you will rotate across various kitchen sections, mastering essential cooking techniques, ingredient precision, and portion control while maintaining rigorous hygiene and safety protocols.

Your responsibilities span from stock management and equipment operation to supporting cost efficiency and waste reduction, all under the guidance of experienced chefs. This dynamic role demands versatility, teamwork, and a commitment to excellence in both execution and cleanliness, making it ideal for those eager to develop foundational culinary skills in a fast-paced environment.

Responsibilities

Maintain High-Quality Food Preparation
  • Execute food preparation tasks under the direct supervision of a Senior Chef, ensuring adherence to quality and presentation standards.
  • Measure and portion ingredients with precision to meet operational and guest expectations.
Operate Kitchen Equipment
  • Handle large-volume cooking equipment such as grills, deep-fat fryers, and griddles safely and efficiently.
Ensure Hygiene and Safety Compliance
  • Uphold strict hygiene protocols, including daily temperature checks, food labeling, and proper storage procedures.
  • Conduct regular cleaning of workstations, utensils, and equipment to maintain HACCP and health regulations.
  • Identify and report hazards or defects in the kitchen, ensuring immediate corrective actions.
Manage Inventory and Stock
  • Monitor stock levels and place timely orders to minimize waste and optimize inventory.
  • Assist in the receipt and storage of deliveries, verifying compliance with company procedures.
Support Kitchen Operations
  • Participate in opening and closing procedures, adhering to assigned rotations.
  • Assist in achieving food cost targets and reducing kitchen spoilage through efficient workflows.
  • Collaborate with the team to maintain cleanliness and support any additional hygiene tasks as requested.
Handle Emergencies
  • Respond promptly to kitchen emergencies, ensuring food safety and operational continuity.
Adhere to Company Policies
  • Follow all company policies, procedures, and training programs for professional development.

Qualifications

Essential
  • Basic Hospitality or Catering training, or a foundation degree in Culinary Arts Management.
  • Previous on-the-job experience or apprenticeship in food preparation and kitchen organization.
  • Proficient knife skills with coordination, precision, and speed.
  • Familiarity with food preparation techniques, including basic sauces, salads, hot dishes, pastry, and roasting.
  • Ability to operate kitchen equipment effectively and communicate fluently in English.
  • Capacity to work under pressure, multitask efficiently, and collaborate with diverse teams.
Desirable
  • Diploma in Hospitality & Catering or Professional Cookery, or a certificate in international cuisine.
  • At least two years of experience in a restaurant or hotel kitchen setting.
  • Versatility across all kitchen sections (vegetable, meat, fish, pastry, butchery).
  • Strong attention to detail and ability to learn quickly in a fast-paced environment.
  • Physical stamina and mental resilience to handle long shifts and high-stress periods.
  • Creative problem-solving skills to enhance food presentation and quality.
  • Basic Food Hygiene and HACCP certification.
