CDP- Sushi

Job Description

Reports To: Sous Chef / Head Chef

Job Purpose

The CDP – Sushi is responsible for preparing high-quality sushi dishes, maintaining food safety standards, leading the sushi section, and ensuring smooth kitchen operations while supporting the culinary team.

• Prepare sushi dishes according to recipes, quality standards, and presentation guidelines.
• Lead and manage the sushi section during daily operations and service hours.
• Supervise, guide, and support junior kitchen staff to ensure proper preparation and consistency.
• Ensure freshness and proper handling of seafood, vegetables, and other ingredients.
• Maintain cleanliness and organization of the sushi station at all times.
• Follow food safety, hygiene, and sanitation standards.
• Monitor stock levels, minimize wastage, and report shortages.
• Support inventory control and proper storage procedures.
• Ensure timely preparation and delivery of dishes during service.
• Assist with menu preparation, new dish development, and continuous improvement of the sushi section.

• Previous experience in sushi preparation or Japanese cuisine.
• Leadership experience within a kitchen environment preferred.
• Good knowledge of food safety and hygiene standards.
• Ability to work in a fast-paced environment.
• Strong leadership, teamwork, and communication skills.
• Flexibility to work shifts, weekends, and holidays.
