The Client:
Our client is a leading FMCG company based in Dubai. We are on the lookout for an industry leader to head their bakery operations, drive new product development, and strengthen their market leadership.
The Role:
As the Head Baker, you will be at the forefront of our clients product innovation and technical excellence, leading a skilled team to deliver world-class frozen bakery products. This senior leadership role is pivotal in shaping product strategy, standardizing scalable recipes, and supporting B2B clients with technical expertise
- Lead the creation, development, and launch of new products across laminated doughs, artisan breads, viennoiserie, and frozen pastries.
- Standardize recipes for large-scale frozen bakery production, ensuring cost-effectiveness, process efficiency, and quality consistency.
- Provide technical support, demonstrations, and training to B2B clients, including menu development and operational guidance.
- Innovate with clean-label trends, functional ingredients, and shelf-life optimization techniques to meet evolving market demands.
- Oversee the integration of freezing technology, HACCP, GMP compliance, and ERP systems into daily operations.
- Collaborate with cross-functional teams in production, R&D, and sales to ensure smooth product rollouts and client satisfaction.
- Monitor industry trends, competitor innovations, and client feedback to guide product improvement and market positioning.
- Ensure continuous improvement initiatives in product quality, operational efficiency, and production scalability.
The Ideal Candidate:
- Proven track record of at least 10+ years in bakery production, with a minimum of 5 years in a senior leadership role within B2B frozen bakery manufacturing.
- Expertise in laminated doughs, artisan breads, viennoiserie, and frozen pastry production.
- Strong knowledge of freezing technology, HACCP, GMP, and ERP systems.
- Demonstrated experience in new product development, recipe standardization, and scaling production without compromising quality.
- Excellent technical presentation skills, with the ability to train and inspire both internal teams and external clients.
- Deep understanding of clean-label, functional ingredients, and shelf-life management.
- Strong leadership and cross-functional collaboration skills, with a track record of driving innovation in competitive markets.
- Exceptional communication, problem-solving, and decision-making abilities.
