Role Overview
A flagship 5-star beach resort in Dubai is seeking an experienced Director of Food & Beverage to lead multi-outlet operations (restaurants, bars, lounges, IRD, banqueting). You will own F&B strategy, guest experience, and full P&L across a high-volume, luxury environment.
Key Responsibilities- Set and execute the F&B strategy across all outlets; deliver best-in-class guest experience and brand standards.
- Own F&B P&L: budgeting, forecasting, cost control, pricing, margin optimization, and menu engineering.
- Lead, coach, and develop a large multi-national team; workforce planning, training, succession.
- Drive revenue (upselling, promotions, partnerships, events) and collaborate with Sales/Marketing on campaigns.
- Oversee banqueting & events/MICE operations end-to-end.
- Ensure HACCP/food safety and HSE compliance; conduct audits and corrective action plans.
- Supplier management and procurement in partnership with Finance/Supply Chain.
- Concept innovation, renovation, and pre-opening readiness when required.
- Implement digital/analytic tools (reservations, CRM/loyalty, guest feedback) to improve KPIs.
- Champion sustainability and waste-reduction initiatives.
- Previous experience as Director of F&B in a large luxury hotel or resort (multi-outlet, high volume).
- Minimum 5 years recent experience in the UAEand international experience in reputed properties.
- 10+ years progressive F&B leadership overall, including 3+ years at Director level.
- Proven success managing full P&L, delivering revenue growth, and improving GOP while elevating guest satisfaction.
- Strong people leadership; track record building high-performing, guest-centric teams.
- Deep knowledge of food safety (HACCP), service standards (fine/casual), beverage programs (wine/mixology).
- Excellent stakeholder management and communication in English (Arabic a plus).
- Hospitality degree or equivalent preferred.
- RevPASH / outlet revenue growth, banquet conversion & yield
- Food & beverage cost %, labor productivity, GOP
- Guest satisfaction/NPS, audit scores (HACCP/HSE/brand)
