We are seeking an experienced and highly professional Head Chef & Kitchen Operations Manager to oversee the full culinary and kitchen operations at a prestigious Royal Palace in Dubai. The ideal candidate will bring a refined culinary skillset, operational excellence, and the ability to lead a team with grace, discipline, and discretion.

This role requires a deep understanding of luxury hospitality, cultural sensitivity, and the ability to meet the highest standards of service.

Requirements:

Key Responsibilities:

Menu Planning & Culinary Innovation:
  • Design and update daily, weekly, and seasonal menus aligned with the Royal Family’s preferences and dietary requirements.
  • Create bespoke menus for high-profile occasions including formal dinners, private events, and themed gatherings.
  • Integrate seasonal produce and diverse international cuisines while ensuring nutritional balance and presentation excellence.
  • Ensure all menus are cost-efficient without compromising on luxury quality, taste, or presentation.
Food Preparation & Supervision:
  • Delegate culinary tasks to team members, ensuring clear understanding of recipes, techniques, and presentation expectations.
  • Conduct daily briefings with the kitchen team to align on menu execution, VIP requests, and any specific preferences.
  • Personally oversee the preparation and presentation of meals to ensure consistency, hygiene, and impeccable taste.
  • Monitor adherence to recipes, cooking times, portion control, and plating standards.
  • Mentor and train junior chefs and kitchen support staff to maintain world-class culinary standards.
Operational & Kitchen Management:
  • Oversee day-to-day kitchen operations, including scheduling, task assignment, and workflow efficiency.
  • Maintain the highest standards of cleanliness and food safety in compliance with HACCP and Dubai Municipality regulations.
  • Manage procurement, stock control, and vendor relationships to ensure timely and cost-effective sourcing.
  • Ensure all kitchen equipment is regularly maintained and in excellent working condition.
  • Implement procedures to minimize waste and ensure sustainability in food usage.
People Leadership:
  • Lead, train, and inspire a multicultural kitchen team (including sous chefs, commis chefs, stewards, etc.).
  • Promote a disciplined, respectful, and collaborative work environment.
  • Conduct regular performance evaluations and provide real-time coaching and feedback.
Communication & Coordination:
  • Work closely with household management, event coordinators, and other staff to align meal services with schedules and expectations.
  • Plan and execute large-scale events, VIP banquets, and last-minute hosting requests with precision and grace.
  • Provide regular updates on kitchen expenditures, staffing, maintenance needs, and overall performance.
Salary: AED 9,000 to 11,000 per month inclusive of fixed allowances.
