Job Overview:

EF Zin Group are seeking a passionate and highly skilled Senior Chef de Partie (Pastry) to join our central kitchen team in Dubai. The role involves overseeing the daily pastry production for a portfolio of premium coffee shops and upscale restaurants across multiple locations.

This is a critical production role that requires creativity, consistency, and an ability to manage volume while maintaining luxury-quality standards.

Key Responsibilities:

  • Supervise and participate in the preparation, baking, and presentation of all pastry and dessert items.
  • Ensure consistent quality and production efficiency in line with brand standards.
  • Collaborate with the Sous Chef to develop new seasonal menus, products, and pastry lines.
  • Maintain the highest hygiene and food safety standards (HACCP).
  • Train and guide junior pastry staff, ensuring high team morale and productivity.
  • Coordinate with the logistics and dispatch teams to ensure timely delivery to all outlets.
  • Monitor stock levels of pastry ingredients and supplies; assist in inventory and ordering.
  • Ensure recipe cards, portion controls, and production schedules are followed precisely.
  • Assist in cost control by minimizing waste and optimizing production efficiency.
  • Innovate and propose modern pastry techniques suited for central kitchen scale production.

Requirements:

  • Minimum 5-7 years of experience in a high-volume pastry kitchen
  • Experience in fine-dining restaurant/Hotels, dessert production is essential.
  • Diploma or degree in Pastry Arts, Culinary Arts, or relevant certification.
  • Expertise in laminated doughs, entremets, viennoiserie, tartlets, and modern plated desserts.
  • Strong leadership and organizational skills.
  • Knowledge of modern equipment and techniques in pastry production.
  • Flexible with schedule; ability to work under pressure.

Preferred Attributes:

  • Knowledge of UAE food safety regulations (Dubai Municipality).
  • Passion for innovation and staying updated with international pastry trends.
